If you’re looking for a healthy alternative that does your sweet tooth justice, this recipe is for you! These cookies are vegan, gluten-free, and white sugar-free so I’d say it’s worthy of indulgence.
These Peanut Butter & Chocolate Oatmeal cookies are delicious and chewy – and have the perfect combination of sweet & salty.
Makes: 9 large cookies
- 1/2 cup of Brown Sugar
- 1 tsp of Honey
- 1 cup of Peanut Butter (Homemade or Store Bought)
- 1 tsp of Vanilla Extract
- 2 large eggs
- 3/4 cup rolled oats
- 1/2 tsp of baking soda
- 1/3 cup of chocolate chunks of your choice
- A pinch of Sea-salt
- A pinch of Cinnamon
Prep Time: 5 minutes Cook Time: 10 Minutes
Before you begin, preheat your oven to 175ºC.
In a large bowl, whisk together the wet ingredients: eggs, peanut butter, brown sugar, honey, and vanilla extract – until smooth.
In a separate bowl, mix together the rolled oats, baking soda and cinnamon. You don’t necessarily need cinnamon, but I love the added spice it brings to the recipe!
Next, carefully add the dry ingredients to the large bowl. Be sure not to over-mix, simply fold the rolled oats into the wet batter. Add your chocolate chunks to the mix! I’ve used a mix of milk and dark chocolate.
Finally, use an ice-cream scoop to get the perfect amount of cookie dough for each cookie, and place it onto a prepared baking sheet.
Pop into your preheated oven for 10-12 minutes. Your oat cookies should develop a light brown color – and that’s when you know they’re ready to be taken out!
Do not overbake the cookies! They will continue to bake on their own once you remove them. For some added flavor, sprinkle some sea salt on top of your cookies, it’ll bring out the flavors of the melted chocolate and give the cookies an extra kick!
